This is the beginning of a beta-version of weekly meal prep. And please note that this is experimental bonus content. I make this on Sunday and it provides dinner for 2 Sunday through Thursday for less than $100 when shopping at Aldi's. Acceptable FIXIN'S include organic sour cream/yogurt and cheese, avocado, onions, plus pickled banana and/or jalapeño peppers. Vegetarians/Vegans can cut the beef and add other plant-based proteins like more beans and tofu or pair with rice or pasta.
